What makes up extract?
Wine extract includes a variety of naturally occurring compounds, such as:
Sugars (especially in wines with residual sweetness) 
Phenolic compounds (tannins and color pigments) 
Acids (tartaric, malic, lactic, and others) 
Minerals (potassium, calcium, magnesium) 
Glycerol, which adds a smooth, rich mouthfeel 
Proteins and polysaccharides, which contribute to texture 
Flavor and aroma compounds that remain dissolved in the wine

How does extract affect wine?
A wine with high extract often has:
A fuller body 
A richer, more concentrated flavor 
Greater viscosity or weight on the palate 
A longer finish 
Better aging potential (depending on acidity and tannin balance) 
A wine with low extract tends to be:
Lighter-bodied 
More delicate 
Crisp and refreshing 
Easier to drink when young

What influences extract?
Several factors contribute to the level of extract in a wine:
Grape variety – Some grapes naturally produce wines with more extract (such as Petite Sirah, Cabernet Sauvignon, and Syrah). 
Ripeness – Fully ripe grapes contain more sugars and flavor compounds. 
Winemaking techniques – Extended skin contact, punch-downs, pump-overs, and barrel aging can increase extract. 
Yield – Lower-yield vineyards often produce grapes with greater concentration. 
Climate – Warm growing regions often produce grapes with higher extract due to greater ripeness.

Examples
A young, light white wine such as a crisp Pinot Grigio typically has lower extract, giving it a light, refreshing character. 
A bold red such as a Petite Sirah or Cabernet Sauvignon often has high extract, resulting in dense fruit flavors, firm tannins, and a full-bodied mouthfeel.

Extract vs. Body
While the two are closely related, they are not identical:
Extract refers to the actual dissolved solids in the wine. 
Body is the sensory impression of weight or fullness in the mouth, influenced by extract, alcohol, glycerol, residual sugar, and acidity.

Is extract a sign of quality?
Not necessarily. Higher extract can indicate concentration and richness, but the best wines have balance. A wine with excessive extract can seem heavy or overly tannic, while a wine with too little extract may taste thin. The ideal amount depends on the style of wine being made.
In simple terms: Think of extract as the "substance" of a wine—the collection of natural compounds that give it body, texture, color, flavor intensity, and depth. It is one of the reasons some wines feel rich and powerful while others are light and delicate.
