WHAT IS ASTRINGENCY IN WINE?
 

Astringency in wine is that dry, puckering, almost rough sensation you feel in your mouth—especially on your gums and tongue—when you take a sip. It's different from bitterness (which is more about taste). Astringency is a tactile or physical sensation primarily linked to the presence of tannins, which are naturally occurring compounds found in grape skins, seeds, and stems, as well as in oak barrels used for aging.
